Ingredients of Mango Ice-cream Muffins
- You need 11/4 cup of mango ice-cream at room temperature.
- It's 3/4 cup of all purpose flour.
- Prepare 1 tsp of baking powder.
- You need 1 pinch of Salt.
- You need 4 tbsp of powdered sugar.
- Prepare 3 tbsp of or more chopped mango pieces.
- Prepare 2 tbsp of rainbow sprinklers (optional).
Mango Ice-cream Muffins instructions
- Mango Ice-cream should be melted normally, it should be at room temperature.
- Preheat oven to 180 and line muffin tins.
- Sieve baking powder, salt and flour in a bowl and keep it aside.
- In a separate bowl, add ice-cream, sprinklers and sugar. Mix well. Add sieved dry ingredients. Cut and fold gently until well combined. It will be sticky batter.
- Fill muffin tins to 2/3rd level and bake for 18-20 minutes until done. Toothpick inserted in centre should come out clean.
- Allow to cool for 30 minutes. Garnish with fresh Mango pieces and serve.
